Homemade Fudge Round

These soft, chewy chocolate sandwich cookies are inspired by the classic Fudge Rounds snack. Rich cocoa cookies are filled with a silky chocolate frosting and topped with a drizzle of melted chocolate. Perfectly indulgent and nostalgic!

Ingredients

  • 10 tablespoons salted butter, melted

  • ⅔ cup natural cocoa powder

  • 1 ⅔ cups granulated sugar

  • 2 eggs, plus 1 egg yolk room temperature

  • 1 ½ teaspoons water

  • 1 teaspoon vanilla extract

  • 1 ⅓ cups all-purpose flour

  • 2 teaspoons cornstarch

  • ½ teaspoon baking powder

  • ½ teaspoon baking soda

  • ¾ cup salted butter, softened

  • 2 ½ cups powdered sugar

  • 5 tablespoons cocoa powder

  • 7 tablespoons heavy cream

  • ½ teaspoon vanilla extract

  • Chocolate melting wafers or almond bark

 

Directions

  1. Preheat oven to 350°F. Line baking sheets with parchment paper.

  2. Melt butter in 30-second intervals in the microwave until fully melted. Stir in cocoa powder and let it bloom for a few minutes.

  3. Once slightly cooled, pour into a large mixing bowl. Add granulated sugar and mix until combined. Add eggs, egg yolk, water, and vanilla. Mix well.

  4. In a separate bowl, whisk together flour, cornstarch, baking powder, and baking soda.

  5. Gradually add dry ingredients to wet ingredients and mix until fully incorporated.

  6. Scoop dough using a 1 1/2 teaspoon-sized scoop. Note: Using a larger scoop will create very large, cake-like cookies. Place dough on prepared baking sheets, spacing well apart.

  7. Bake for 10–13 minutes, or until a toothpick inserted comes out clean. Cookies will spread and be flat. Let cool coIn a stand mixer, beat butter until smooth and creamy.

  8. Add 1 cup powdered sugar and all the cocoa powder. Mix. Add 2 tablespoons of heavy cream and mix again. Add another 1 cup powdered sugar and mix.

  9. Add 2 more tablespoons of heavy cream and mix again. Add the final 1/2 cup powdered sugar, remaining 3 tablespoons heavy cream, and vanilla. Beat until smooth and silky. The frosting should be soft but thick enough to pipe.

  10. Assemble the Fudge Rounds: Flip one cookie upside down and pipe frosting onto the flat side. Top with a second cookie to make a sandwich.

    Melt chocolate wafers or almond bark in the microwave, then drizzle or pipe over the top of the assembled cookies. Let set.
