Homemade Marshmallows
Soft, fluffy homemade marshmallows made with fruit flavored gelatin for an easy burst of flavor. Choose your favorite Jell O flavor and coat them in powdered sugar for a sweet homemade treat.

Ingredients
1 3 oz box fruit flavored gelatin, such as Jell O
1 packet unflavored gelatin, about 2¼ teaspoons
1 cup granulated sugar
1 cup boiling water
Powdered sugar, for coating
Directions
Lightly grease a 9 × 9 inch pan and generously dust with powdered sugar.
Pour the boiling water into the bowl of a stand mixer. Add the fruit flavored gelatin and unflavored gelatin. Let sit for 1 minute, then whisk until completely dissolved. Add the granulated sugar and whisk until mostly dissolved.
Using the whisk attachment, begin mixing on low and gradually increase to high. Whip for 8 to 12 minutes until very thick, fluffy, pale, and able to hold stiff peaks.
Quickly spread the mixture into the prepared pan using a lightly greased spatula. Let sit uncovered at room temperature for 4 to 6 hours, or overnight, until completely firm.
Generously dust the top with powdered sugar. Turn onto a cutting board and cut into squares with a lightly greased knife. Toss each marshmallow in powdered sugar to coat all cut sides.
Tip: Add 1/2 cup cornstarch to the powdered sugar when coating each marshmallow.
