Doria Japanese Gratin
A comforting Japanese style layered gratin made with rice, creamy mashed potatoes, and a cheesy chicken topping with onion and garlic.

Ingredients
2 cups cooked rice
2 cups prepared mashed potatoes
1 lb boneless skinless chicken breast, cut into bite sized pieces
1 small onion, thinly sliced
2 cloves garlic, minced
1½ cups whole milk
1½ cups shredded cheese
2 Tbsp butter
½ tsp salt
½ tsp black pepper
Directions
Preheat oven to 375°F. Spread the cooked rice evenly in the bottom of a greased baking dish, then spread the mashed potatoes over the rice.
Melt the butter in a skillet over medium heat. Add the chicken and onion and cook for 5 to 7 minutes. Add the garlic, salt, and pepper and cook for another minute.
Pour in the milk and simmer for 3 to 5 minutes until slightly thickened. Stir in 1 cup of the shredded cheese until melted and creamy.
Spread the chicken mixture evenly over the mashed potatoes and top with the remaining ½ cup cheese.
Bake for 20 to 25 minutes until hot and bubbly. Broil for 1 to 2 minutes if desired to brown the cheese.
