Jalapeño–Honey Cilantro Lime Slaw

Ingredients
1 standard bag coleslaw mix (14–16 oz)
1 jalapeño, very finely minced (seeded for mild)
¼ cup chopped fresh cilantro
2 green onions, thinly sliced (optional)
Dressing (Double Batch):
4 tbsp honey
Zest of 2 limes
6 tbsp fresh lime juice
5 tbsp avocado oil or light olive oil
1 tsp kosher salt
½ tsp white or cracked black pepper
½ tsp Fiesta Smoky Swine seasoning
Directions
Place coleslaw mix in a large bowl and toss with ½ tsp salt. Let rest 10 minutes, then gently squeeze out excess liquid.
In a separate bowl, whisk all dressing ingredients until fully combined and smooth.
Add jalapeño and green onions to the slaw. Pour dressing over and toss until evenly coated.
Fold in cilantro just before serving. Taste and adjust lime or salt if needed.
