Lemon Herb Crusted Chicken

Ingredients

  • 4 boneless, skinless chicken breasts

  • ¼ cup fresh lemon juice

  • ½ cup breadcrumbs

  • 2 tablespoons fresh parsley, chopped

  • 1 tablespoon fresh rosemary, chopped

  • 1 tablespoon fresh thyme, chopped

  • ¼ cup grated Parmesan cheese

  • 2 tablespoons olive oil

  • Salt and pepper to taste

 

Directions

  1. Preheat your oven to 375°F (190°C).

  2. In a shallow dish, combine breadcrumbs, parsley, rosemary, thyme, Parmesan cheese, salt, and pepper.

  3. Brush each chicken breast with olive oil, then dip into the breadcrumb mixture, pressing gently to coat evenly.

  4. Place the chicken breasts on a baking sheet lined with parchment paper.

  5. Drizzle a little olive oil over the top of the chicken for extra crispiness.

  6. Bake for 25–30 minutes, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F or 74°C).

    Serve with a wedge of lemon for an extra burst of flavor.
