Ingredients

  • 1 (14 oz) can sweetened condensed milk, CHILLED

  • 1 (6 oz) package lemon gelatin, like Jell-O

  • 1 (16 oz) container frozen whipped topping, thawed

  • 2 pre-made graham cracker pie crusts (8-inch), or your favorite graham cracker crust for a 9x13-inch dish

  • Optional garnishes: whipped cream, fresh lemon slices, extra graham cracker crumbs

 

Directions

  1. Chill the condensed milk: For the best results, place your can of sweetened condensed milk in the refrigerator for at least 1 hour before you begin. This helps the mixture set up beautifully.

  2. Combine the base: Pour the chilled sweetened condensed milk into a large mixing bowl. With your electric mixer on low speed, slowly add the lemon gelatin powder to the condensed milk. Gradually increase the speed to medium and whip until the mixture is smooth and slightly thickened. Make sure there are no lumps of gelatin remaining.

  3. Fold in whipped topping: Gently fold in the thawed whipped topping using a spatula until no white streaks remain and the mixture is uniformly combined and airy. Be careful not to overmix, as this can deflate the whipped topping.

  4. Fill the crusts: Divide the lemon mixture evenly between your two graham cracker pie crusts (or pour it all into a single graham cracker crust in a 9x13-inch casserole dish).

  5. Chill to set: Place the pies or casserole dish in the refrigerator to chill for a minimum of 30 minutes. For the best, firmest texture and flavor, refrigerate for at least 2 hours, or even longer.

  6. Garnish and serve: Once thoroughly chilled, slice and serve. For an extra touch of elegance, garnish with a dollop of whipped cream, a thin fresh lemon slice, or a sprinkle of extra graham cracker crumbs.
