Low Carb Bacon Broccoli Cheddar Soup

 

Ingredients

  • 4 tbsp. butter

  • 1 diced medium onion

  • 1 tsp. Minced garlic

  • 2 stalks celery deveined & chopped

  • 1/4 c. Carbquik

  • 3 c. chicken broth

  • Salt (to taste)

  • Ground black pepper (to taste)

  • 3-4 cups broccoli, finely chopped

  • 1 large carrot, grated

  • 2 c. Heavy cream

  • 3 c. shredded cheddar

  • 1 cup chopped bacon

 

Directions

  1. Fry bacon strips in a large pot over medium heat. Once they are crispy remove the bacon, chop and set aside.

  2. Melt butter into the bacon fat left in the pan.

  3. Add onion, celery and garlic cook until soft.

  4. Whisk in flour and let cook about 1 minute.

  5. Next add chicken broth a little at a time whisking in between additions and season with salt and pepper.

  6. Add in broccoli and carrots. Let this come to a boil and reduce heat to low. Let simmer until vegetables (about 20 minutes) so the veggies are tender.


  7. Slowly add heavy cream bring back to a simmer.

  8. Then add shredded cheddar and bacon. Stir until cheese is melted.

  9. Season with salt and pepper and top with more cheddar.

  10. Other additions: I like to add sour cream, chives and hot sauce to the top of mine

Notes: For traditional version substitute flour for CarbQuik and heavy cream for milk.

Other uses: For Dip, melt in 1 brick of cream cheese. Also as a topping for baked potatoes.
