Melissa's Cilantro Lime Rice

A fragrant and flavorful rice dish made with fresh lime juice and chopped cilantro, perfect as a side for Mexican or Tex-Mex meals. Light, zesty, and simple to make.

 

Ingredients

  • 1 tsp extra virgin olive oil

  • 1 tbsp butter

  • 1 cup basmati rice (or other long-grain rice)

  • 2 cups water or broth

  • 2 tbsp freshly squeezed lime juice

  • ½ cup cilantro leaves, chopped

  • Pinch of salt

  • Pinch of lime zest (optional)

 

Directions

  1. In a medium saucepan, heat the olive oil and butter over medium heat.

  2. Add the rice and lightly toast it, stirring frequently, until it begins to smell nutty, about 2–3 minutes.

  3. Pour in the water or broth, add a pinch of salt, and stir. Bring to a boil.

  4. Once boiling, reduce the heat to low, cover, and simmer undisturbed for 20 minutes.

  5. After 20 minutes, turn off the heat and let the rice sit, covered, for 10 minutes.

  6. Remove the lid, add the lime juice, cilantro, and lime zest (if using), and fluff with a fork.
