Michelle's Enchiladas

 

Ingredients

  • 3 chicken breasts

  • 1 tsp fajita seasoning

  • 3 Tbsp olive oil

  • Salt and pepper to taste

  • 7 large flour tortillas

  • 6 oz cream cheese

  • 1/2 cup prepared queso (I used queso blanco)

  • 1 tsp cumin

  • 12 oz mild salsa Verde

  • 1/2 cup sour cream

  • 8 oz shredded Mexican cheese

 

Directions

  1. Preheat oven to 350°F. Cover the chicken with oil and fajita seasoning and bake for 35-40 min or 165°F internal temp and let rest a few minutes

  2. Combine 4 oz cream cheese, prepared queso, and cumin. Chop the chicken and add cheese mixture to it.

  3. Mix together the Verde salsa, sour cream, and 2 oz cream cheese. Pour 1/2 cup of this mixture at the bottom of a 9×13 baking dish.

  4. Fill each of the tortillas with an even amount of chicken filling, roll the tortillas, and place in a baking dish seam side down.

  5. Top the tortilla rolls with the rest of the salsa mixture and top with Mexican cheese.

  6. Bake at 350 for another 25-30 min or until cheese is golden brown.
