No Bake Cookies

These classic no bake cookies come together in minutes with rich cocoa, creamy peanut butter, and quick oats. No oven required—just melt, mix, drop, and cool!

Ingredients

  • ½ cup salted butter

  • ½ cup whole milk

  • 1 cup light brown sugar, firmly packed

  • 1 cup granulated sugar

  • ¼cup cocoa powder

  • ⅔ cup creamy peanut butter

  • 2 teaspoons vanilla extract

  • 3 cups instant or quick oats

 

Directions

  1. Line cookie sheets with silicone baking mats or wax paper.

  2. In a medium saucepan over low heat, combine butter, milk, brown sugar, granulated sugar, and cocoa powder. Stir frequently.

  3. Gradually increase heat to medium, stirring constantly until the mixture reaches a boil.

  4. Let it boil for exactly 1 minute, then remove from heat and continue stirring for a few seconds.

  5. Stir in peanut butter and vanilla until smooth and fully combined.

  6. Add oats and stir until evenly coated in the chocolate mixture.

  7. Drop by heaping tablespoons (about 2 tablespoons each) onto the prepared cookie sheets.

  8. Let cookies cool and set at room temperature for about 30 minutes.
