Oatmeal Chocolate Covered Raisin Cookies

Ingredients
1 cup (2 sticks) unsalted butter, at room temperature
1 cup packed light brown sugar
¾ cup white sugar
2 large eggs
1 tsp vanilla extract
2 1/2 cups old-fashioned oats
2 cups all-purpose flour
¾ tsp ground cinnamon
½ tsp kosher salt (or to taste)
1 ½ tsp baking powder
1 tsp baking soda
1 cup chocolate-covered raisins (milk or dark)
Directions
Prep: Preheat oven to 350 degrees . Line baking sheets with parchment paper.
Wet Ingredients: In a large bowl, cream together the butter, light brown sugar, and white sugar until smooth. Beat in the eggs, one at a time, then stir in the vanilla extract.
Dry Ingredients: In a separate bowl, combine the flour, baking powder, baking soda, salt, and cinnamon. Gradually stir the dry mixture into the wet ingredients.Combine: Mix in the old-fashioned oats. Gently fold in the chocolate-covered raisins.
Bake: Scoop dough into balls, placing them 2 inches apart on the baking sheet. Bake for 10–15 minutes until the edges are golden brown but the centers are still slightly soft.
Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely
