Oatmeal Chocolate Covered Raisin Cookies

If you have a hard time deciding between chocolate in your oatmeal cookies or raisins. Problem solved. You’re welcome.

Ingredients

  • 1 cup (2 sticks) unsalted butter, at room temperature

  • 1 cup packed light brown sugar

  • ¾ cup white sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 2 1/2 cups old-fashioned oats

  • 2 cups all-purpose flour

  • ¾ tsp ground cinnamon

  • ½ tsp kosher salt (or to taste)

  • 1 ½ tsp baking powder

  • 1 tsp baking soda

  • 1 cup chocolate-covered raisins (milk or dark)

 

Directions

  1. Prep: Preheat oven to 350 degrees . Line baking sheets with parchment paper.

  2. Wet Ingredients: In a large bowl, cream together the butter, light brown sugar, and white sugar until smooth. Beat in the eggs, one at a time, then stir in the vanilla extract.

  3. Dry Ingredients: In a separate bowl, combine the flour, baking powder, baking soda, salt, and cinnamon. Gradually stir the dry mixture into the wet ingredients.Combine: Mix in the old-fashioned oats. Gently fold in the chocolate-covered raisins.

  4. Bake: Scoop dough into balls, placing them 2 inches apart on the baking sheet. Bake for 10–15 minutes until the edges are golden brown but the centers are still slightly soft.

  5. Cool: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely
