Ingredients

Croissant Churro Crunch:

  • 6–7 cups cubed croissant bread (or leftover croissant loaf)

  • 3–4 tbsp melted butter

  • ⅓ cup sugar

  • 1–2 tsp cinnamon

Mascarpone Cheesecake Cream:

  • 8 oz cream cheese, softened

  • 8 oz mascarpone

  • ½ cup powdered sugar (adjust to taste)

  • 1 tsp vanilla extract

  • Pinch of salt

Peach Layer:

  • 4 cups peaches, cubed

  • 3 tbsp butter

  • ⅓ cup brown sugar

  • 1 tsp cinnamon

  • 1 tsp vanilla extract (or splash bourbon, optional)

  • 1 tsp lemon juice

Toppings:

  • Store-bought caramel sauce

  • Candied pecans (store-bought)

 

Directions

  1. Toss Cubes: Toss croissant cubes in melted butter.

  2. Coat with Cinnamon Sugar: Mix sugar and cinnamon, then toss cubes until coated.

  3. Air Fry: Cook at 350°F for 5–7 minutes, shaking halfway, until golden and crisp.

  4. Cool: Let cool completely so they crunch up.

Mascarpone Cheesecake Cream:

  1. Beat Cream Cheese: Whip until smooth.

  2. Add Remaining Ingredients: Mix in mascarpone, powdered sugar, vanilla, and salt.

    Optional Adjustment: If needed, loosen with 2–3 tbsp heavy cream until spreadable.

Peach Layer:

  1. Melt Butter: In a skillet over medium heat.

  2. Cook Peaches: Add peaches, brown sugar, cinnamon, vanilla, and lemon juice.

  3. Simmer: Cook about 5 minutes, stirring gently, until peaches soften and syrup forms (don’t overcook).

  4. Cool: Set aside to cool before layering.

Assembly:

  1. First Layer: Add churro croissant cubes to the bottom of a trifle dish or serving glasses.

  2. Second Layer: Spread mascarpone cheesecake cream.

  3. Third Layer: Spoon over peaches with syrup.

  4. Repeat: Continue layering as desired.

  5. Finish: Top with peaches, caramel drizzle, and candied pecans.

    Optional Touch: Dust with extra cinnamon sugar for a true churro finish.
