Pecan Pralines

classic South Alabama praline made with rich caramelized sugar, pecans, and warm vanilla. Soft, creamy, melt-in-your-mouth candy.

Yield: 18-24 Pralines
Prep Time: 10 minutes
Cook Time: 15 minutes
Special Equipment: heavy bottom pot. Candy thermometer

 

Ingredients

  • 1½ cups white sugar

  • 1½ cups light brown sugar

  • ¼ tsp salt

  • ¾ cup evaporated milk

  • ⅓ cup Karo syrup

  • 1 tsp butter

  • 2 cups pecans

  • 1 tsp vanilla extract

  • ¼ tsp cinnamon

 

Directions

  1. Cook the praline base by combining the sugars salt evaporated milk and Karo syrup in a heavy pot stirring over medium heat until it reaches soft-ball stage about 238°F.

  2. Remove from heat and stir in the butter pecans vanilla and cinnamon until slightly thickened.

  3. Drop spoonfuls onto freezer paper or greased wax paper and let cool completely.
