Pecan Pralines
classic South Alabama praline made with rich caramelized sugar, pecans, and warm vanilla. Soft, creamy, melt-in-your-mouth candy.

Special Equipment: heavy bottom pot. Candy thermometer
Ingredients
1½ cups white sugar
1½ cups light brown sugar
¼ tsp salt
¾ cup evaporated milk
⅓ cup Karo syrup
1 tsp butter
2 cups pecans
1 tsp vanilla extract
¼ tsp cinnamon
Directions
Cook the praline base by combining the sugars salt evaporated milk and Karo syrup in a heavy pot stirring over medium heat until it reaches soft-ball stage about 238°F.
Remove from heat and stir in the butter pecans vanilla and cinnamon until slightly thickened.
Drop spoonfuls onto freezer paper or greased wax paper and let cool completely.
