Poppy Seed Chicken
Ingredients
- 2 chicken breasts 
- 1 carrot, cut 
- ½ onion, sliced 
- ½ tsp garlic powder 
- 1 can cream soup (chicken, mushroom, or celery) 
- 8 oz sour cream 
- ¼ white wine or substitute with chicken broth 
- 1 tsp poppy seeds 
- Olive oil, for cooking 
- 1 sleeve butter flavored crackers 
- 1 stick of butter 
Directions
- Place oil in skillet. Warm it, then add chicken, veggies, and bay leaf. Sauté well. When chicken is done, cut into bite size pieces or shred. 
- Preheat oven to 350°F. Mix chicken and veggies in a bowl with the sour cream, soup mix, wine, and poppy seeds. Once it's mixed well, place in greased baking dish. 
- Crush the sleeve of butter flavored crackers. Melt 1 stick of butter in the microwave. 
- Top casserole with crushed crackers and drizzle with melted butter. Place in a preheated oven and bake for 30 mins or until hot and bubbly.
