Potato Candy

A classic old fashioned candy made with a surprising potato based dough, rolled with creamy peanut butter and sliced into sweet, soft swirls.

Ingredients

  • 1 small russet potato

  • 4 to 5 cups confectioners’ sugar, plus extra as needed

  • 1 tsp vanilla extract

  • ½ cup creamy peanut butter

 

Directions

  1. Peel and cut the potato into chunks. Boil for 15 to 20 minutes until very tender, then drain extremely well.

  2. Mash until completely smooth. Measure ½ cup mashed potato and allow it to cool slightly.

  3. Stir in the vanilla, then gradually add the confectioners’ sugar 1 cup at a time until a soft, workable dough forms that is no longer sticky.

  4. Dust the work surface with confectioners’ sugar and roll the dough into a rectangle about ¼ inch thick.

  5. Spread the peanut butter evenly over the dough, then roll tightly into a log starting from one long side.

  6. Wrap in plastic wrap and refrigerate for 1 to 2 hours until firm.

  7. Cut into ½ inch slices and serve.
