Potato Candy
A classic old fashioned candy made with a surprising potato based dough, rolled with creamy peanut butter and sliced into sweet, soft swirls.

Ingredients
1 small russet potato
4 to 5 cups confectioners’ sugar, plus extra as needed
1 tsp vanilla extract
½ cup creamy peanut butter
Directions
Peel and cut the potato into chunks. Boil for 15 to 20 minutes until very tender, then drain extremely well.
Mash until completely smooth. Measure ½ cup mashed potato and allow it to cool slightly.
Stir in the vanilla, then gradually add the confectioners’ sugar 1 cup at a time until a soft, workable dough forms that is no longer sticky.
Dust the work surface with confectioners’ sugar and roll the dough into a rectangle about ¼ inch thick.
Spread the peanut butter evenly over the dough, then roll tightly into a log starting from one long side.
Wrap in plastic wrap and refrigerate for 1 to 2 hours until firm.
Cut into ½ inch slices and serve.
