Cook Time: 30-35 minutes
Ingredients
Cake Ingredients
2 cups all-purpose flour
2 cups sugar
2 eggs
20 oz can of crushed pineapple
1 teaspoon vanilla
1 teaspoon baking soda
1 teaspoon cinnamon
1 cup chopped pecans
A pinch of salt
Cream Cheese Frosting Ingredients
1 stick softened butter
8 oz block of cream cheese
1 teaspoon vanilla
2 1/2 cups powdered sugar
Optional Topping Ingredients
1/4 cup brown sugar
1 tablespoon cinnamon
Additional chopped pecans
Directions
Prepare the Cake
Combine all cake ingredients (except pecans) and mix until it has an oatmeal-like consistency
Stir in 1 cup of chopped pecans
Bake at 350°F for 30-35 minutes, or until a butter knife inserted comes out clean
Prepare the Cream Cheese Frosting
Once the cake is cooled, prepare the frosting
Combine 1 stick of softened butter, an 8 oz block of cream cheese, and 1 teaspoon of vanilla
Initially, this mixture might be difficult to stir, so use a hand mixer for a smoother consistency
Gradually add 2½ cups powdered sugar, about half a cup at a time, to reduce mess
Once it reaches the desired consistency, spread it evenly over the cooled cake
Prepare the Optional Topping
Mix optional topping ingredients together and sprinkle over the frosted cake
