Buttermilk Cornbread

Ingredients
1 ¼ cups all-purpose flour
¾ cup Enriched Corn Meal
¼ cup sugar
2 teaspoons baking powder
½ teaspoon salt (optional)
1 cup buttermilk milk
¼ cup vegetable oil
2 egg whites OR 1 whole egg, beaten
Directions
Heat oven to 400°F. Grease an 8 or 9-inch square baking pan.
Combine Dry Ingredients In a medium mixing bowl, combine the flour, corn meal, sugar, baking powder, and salt.
Add Wet Ingredients. Stir in the milk, vegetable oil, and the beaten egg (or egg whites).
Mix just until the dry ingredients are moistened. Note: Be careful not to overmix, or the bread may become tough.
Bake: Pour the batter into the prepared pan. Bake for 20 to 25 minutes, or until the top is a light golden brown and a wooden pick inserted into the center comes out clean.
Serve warm.
