Queen G's Taco Bell Enchirito (Copycat)

The iconic Taco Bell favorite made at home with finely ground taco meat, refried beans, homemade Enchirito sauce, and plenty of melted cheese. Just like the original, but even better.

Ingredients

  • 1 packet taco seasoning

  • 1 to 1½ tbsp beef tallow

  • 1 (8 oz) can tomato sauce

  • 1 (8 oz) can water

  • 1/2 tsp distilled white vinegar

  • 1/2 tsp salt

    Taco Meat:

  • 1 lb ground beef

  • Favorite taco seasoning

    For the Enchiritos:

  • Taco size flour tortillas

  • Refried beans

  • Prepared taco meat

  • Diced white onion

  • Mexican blend shredded cheese

  • Prepared Enchirito sauce

  • Sliced black olives, optional

 

Directions

  1. In a saucepan, combine the taco seasoning and enough beef tallow to make a loose slurry. Cook over medium low heat for 5 minutes, stirring frequently. Stir in the tomato sauce and simmer for 5 to 7 minutes. Add the water and continue simmering for another 5 to 7 minutes until the sauce lightly coats a spoon. Remove from the heat, stir in the vinegar, and season with salt.

  2. Prepare the taco meat using your favorite taco seasoning. Transfer the cooked meat to a food processor and pulse several times until finely ground, but not a paste.

  3. Warm the tortillas until soft. Spread a thin layer of refried beans down the center of each tortilla. Top with taco meat, diced onion, and a small handful of Mexican blend cheese. Roll tightly and place seam side down.

  4. Spoon the Enchirito sauce generously over the top, sprinkle with more cheese, and heat in the microwave until hot and melted, or bake at 350°F until heated through.

  5. Garnish with sliced black olives, if desired.

    Family Style:

    Arrange the rolled Enchiritos seam side down in a 9x13 inch baking dish. Cover with the Enchirito sauce, top with additional cheese, and bake at 350°F until hot, bubbly, and the cheese is melted.

    Tips:

    Beef tallow gives the sauce the closest Taco Bell flavor. If you don't have it, substitute vegetable, canola, or avocado oil.

    Pulsing the cooked taco meat in a food processor is the key to achieving the authentic Taco Bell texture.
