Rainbow Chip Cupcakes

These delightful Rainbow Chip Cupcakes are a celebration in every bite! Featuring a moist vanilla cupcake base with colorful rainbow chips, they're perfectly complemented by a rich buttercream frosting, also generously folded with even more vibrant rainbow chips.

Ingredients

  • ½ cup unsalted butter, melted

  • 1 cup granulated sugar

  • 1¼ cups all-purpose flour

  • 1 teaspoon baking powder

  • ½ teaspoon baking soda

  • 1 tablespoon cornstarch

  • Pinch of salt

  • ½ teaspoon butter extract (optional)

  • 1 large egg, room temperature

  • 2 teaspoons vanilla extract

  • ¾ cup whole milk

  • ⅓ cup Greek yogurt or sour cream

  • ½ cup rainbow chips

    Buttercream Frosting

  • ½ cup unsalted butter, room temperature

  • 2 teaspoons vanilla extract

  • 2½ - 3 cups powdered sugar

  • ¼ cup heavy whipping cream

  • ⅓ cup rainbow chips

 

Directions

  1. Prepare the batter: Preheat oven to 350°F (175°C) and line a cupcake pan with liners.

    Melt the butter and mix it with sugar. Chill for a few minutes.

    Combine dry ingredients: In a separate bowl, whisk together flour, baking powder, baking soda, cornstarch, and salt.

    Combine wet ingredients: Stir in butter extract, egg, vanilla, milk, and Greek yogurt/sour cream. Gradually mix in the dry ingredients.

    Fold in rainbow chips. Distribute the batter evenly into cupcake liners.

  2. Bake: Bake for 15-18 minutes or until a toothpick inserted comes out clean. Let cool completely.

  3. Prepare the frosting: Beat butter until smooth, then mix in vanilla and powdered sugar. Add heavy cream gradually until fluffy.

    Fold in rainbow chips and pipe onto cooled cupcakes.
