Mexican Shrimp Cocktail
Cold, zesty, and loaded with tender shrimp, fresh vegetables, lime, and that classic Mexican style cocktail flavor.

Ingredients
3 lbs raw shrimp, peeled and deveined
Water, enough for boiling
Salt
4 garlic cloves, peeled
1 small onion, cut into large chunks
1½ red onions, diced
8 to 10 Roma tomatoes, diced
1½ bunches cilantro, chopped
2 to 3 jalapeños or serrano peppers, finely diced
Juice of 5 to 6 limes
1½ cups Orange Fanta
1 cup ketchup
2 cups Clamato
Maggi seasoning, to taste
Tabasco sauce, to taste
Salt, to taste
Black pepper, to taste
2 avocados, diced, optional
Directions
Bring a large pot of salted water to a boil. Add the garlic and onion and boil for 5 minutes.
Add the shrimp and cook for 2 to 3 minutes until pink and opaque. Drain immediately and transfer to an ice bath. Once cooled, drain well.
Combine the shrimp, tomatoes, red onion, cilantro, and jalapeños or serranos in a large bowl.
Add the lime juice, Orange Fanta, ketchup, Clamato, Maggi, Tabasco, salt, and pepper. Mix well.
Cover and refrigerate for 30 minutes to 1 hour.
Gently fold in the avocado just before serving, if using. Serve cold with tostadas, saltine crackers, or tortilla chips.
