Yields: 8 scones
Prep Time: 20 minutes
Cook Time: 25 minutes
Special Equipment: Baking Sheet

Ingredients

  • 2 cups all-purpose flour

  • 1 tbsp sugar

  • 2 ½ tsp baking powder

  • ¾ tsp garlic powder

  • ½ tsp salt

  • ¼ tsp pepper

  • 3 tbsp freshly chopped chives

  • 1 cup shredded cheese of choice

  • ½ cup frozen butter, grated

  • ⅔ cup buttermilk, very cold (plus 1 tbsp for brushing)

  • 1 large egg, separated

  • ¾ cup finely chopped ham (diced ham pieces)

Directions

  1. Preheat Oven: Preheat oven to 400°F. Line a cookie sheet with parchment paper.

  2. Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, garlic powder, salt, pepper, and chives.

  3. Cut in Butter: Add frozen grated butter and cut into the flour mixture with a pastry cutter until pieces are pea-sized.

  4. Prepare Wet Ingredients: In a small bowl, whisk together the egg yolk and buttermilk (reserve 1 tbsp). Pour into dry mixture and stir until crumbly. Fold in ham and cheese.

  5. Form Dough: Turn dough out onto a floured surface. Gently knead until it comes together. Shape into an 8-inch disc.

  6. Cut and Chill: Using a pizza cutter, slice into 8 wedges. Place wedges on prepared baking sheet and refrigerate for 15 minutes.

  7. Egg Wash & Bake: Mix the reserved egg white with the reserved 1 tbsp buttermilk. Brush over the scones. Bake for 25 minutes or until tops are golden brown.

  8. Cool & Serve: Allow scones to cool slightly before serving warm.
