Cheese slices (American or cheddar)
½ stick butter
1 tbsp Worcestershire sauce
½ tbsp fish sauce

¼ cup spicy brown mustard
2 garlic cloves, minced
1 tbsp white vinegar

Salt & pepper to taste
Directions
Prep the meat: Mix ground chuck with Worcestershire, fish sauce, and butter. Gently form into 3-4 oz balls. Chill for 30+ minutes.
Heat your skillet: Use a cast iron pan on high heat. No oil needed because fat from the beef does the job.
Smash & sear: Place meatballs in the pan. After 30 seconds, smash flat with a heavy spatula or skillet. Cook 3-4 minutes until edges crisp. 4
Flip & cheese: Flip patties, add cheese immediately. Cook 1-2 more minutes until melted.
Toast buns: Optional: butter and toast buns in the pan for extra flavor.
