Yields: 4 servings
Prep Time: 45 minutes
Cook Time: 10 minutes
Special Equipment: large skillet or blackstone

Ingredients

  • 1 lb ground chuck (80/20 for best flavor and crisp)

  • Kosher salt & black pepper

  • Burger buns (soft, not too thick)

  • Cheese slices (American or cheddar)

  • ½ stick butter

  • 1 tbsp Worcestershire sauce

  • ½ tbsp fish sauce

Burger Sauce:

  • ¼ cup mayonnaise

  • ¼ cup ketchup

  • ¼ cup spicy brown mustard

  • 2 garlic cloves, minced

  • 1 tbsp white vinegar

  • Pinch of cayenne

  • Pinch of smoked paprika

  • Pinch of sugar

  • Salt & pepper to taste

Directions

  1. Prep the meat: Mix ground chuck with Worcestershire, fish sauce, and butter. Gently form into 3-4 oz balls. Chill for 30+ minutes.

  2. Heat your skillet: Use a cast iron pan on high heat. No oil needed because fat from the beef does the job.

  3. Smash & sear: Place meatballs in the pan. After 30 seconds, smash flat with a heavy spatula or skillet. Cook 3-4 minutes until edges crisp. 4

  4. Flip & cheese: Flip patties, add cheese immediately. Cook 1-2 more minutes until melted.

  5. Toast buns: Optional: butter and toast buns in the pan for extra flavor.

  6. Assemble: Spread sauce on buns, add patty, and layer with toppings like pickles, onions, lettuce, or tomato.
