Smash Burgers

 

Ingredients

  • 1 ½ pounds ground beef chuck 80/20 is the best & most flavorful

    • 1 teaspoon kosher salt

    • ½ teaspoon black pepper

    • 1-2 teaspoons Worcestershire sauce

    • 1-2 jalapeños

    • 1 cup shredded cheddar cheese

    • 6 slices cheese use your favorite, American, cheddar, pepper jack

    • Hamburger buns

    • 2-3 tablespoons butter to grill buns

    Caramelized Onions

    • 2 large sweet yellow onions sliced thin

    • 3-4 tablespoons canola oil

    • pinch kosher salt

    Suggested Optional Toppings

    • Bacon

    • shredded lettuce

    • sliced tomatoes

    • pickles

 

Directions

  1. Prepare Smash Burger Balls

  2. In a bowl add ground chuck, shredded cheese, and chopped jalapeño. Sprinkle the following evenly over the meat; kosher salt, black pepper, and Worcestershire Sauce. Mix it all together. Divide meat into 8 similar-sized meatballs.

  3. Return the burger balls to the refrigerator until ready to grill.

  4. Grill Onions & Bacon

  5. If making caramelized onions, on the flat top grill, over medium heat add canola oil and sliced onions, sprinkling with salt. Grill, tossing occasionally until caramelized, about 10-15 minutes. Scoot onions to the low heat side, where they can continue cooking, stirring occasionally.

  6. Put bacon on the flat top, and grill to your preferred taste.

  7. Grill Buns

  8. Butter buns and grill until golden brown, set aside. Have toppings sliced and ready to build your Smashburger.

  9. Grill Smash Burgers

  10. Increase grill temperature to the higher side of medium-high heat. Once hot, place burger balls onto the griddle, to keep the meat from sticking, place a square of parchment paper onto the top of the burger ball, then immediately smash straight down on the burgers, so they become a thin patty.

  11. Use a wide steel spatula, you may have to use your hand or something else to push down on the spatula or a burger press.

  12. Grill for 2 -3 minutes, flip and cook for 2 more minutes on other side. Add cheese during last minute until melted.

  13. Build your burger by adding mayo to the bottom bun, then add burger, caramelized onions, bacon, shredded lettuce, tomato, and pickles. Add the top bun.
