Yields: 4 servings
Prep Time: 15 minutes
Cook Time: 25 minutes
Special Equipment: Skillet

Ingredients

  • 1 lb. smoked sausage

  • 3 medium potatoes, diced small (skin on for texture)

  • 1 small onion, diced

  • ½ cup mushrooms

  • 3 cloves garlic, minced

  • 2 tbsp smoked paprika

  • 1 ½ tsp cumin

  • 1 tsp dried thyme

  • ½ tsp red pepper flakes (optional, for heat)

  • Salt and black pepper to taste

  • 3 tbsp butter

  • 1 tbsp olive oil

  • 2 tbsp Worcestershire sauce

  • 8 oz. shredded sharp cheddar (optional)

  • 2 tbsp chopped fresh parsley (for garnish)

Directions

  1. Prep the Potatoes: Heat 1 tbsp olive oil and 2 tbsp butter in a large skillet over medium-high heat. Add diced potatoes and cook until golden brown and slightly crispy, about 12–15 minutes, stirring occasionally. Remove from skillet and set aside.

  2. Cook the Sausage: In the same skillet, melt the remaining 1 tbsp butter. Add smoked sausage and cook until browned, about 6–8 minutes. Drain excess fat if needed.

  3. Add Aromatics & Spices: Stir in onion, mushrooms, and garlic. Sauté until softened, about 5 minutes. Add smoked paprika, cumin, thyme, red pepper flakes, salt, and black pepper. Stir well to coat the sausage and veggies.

  4. Combine & Flavor: Return the potatoes to the skillet. Pour in Worcestershire sauce and stir everything together. Cook for another 3–4 minutes so the flavors meld.

  5. Cheesy Finish: Sprinkle shredded cheddar evenly over the skillet. Cover with a lid and reduce heat to low. Let the cheese melt, about 2–3 minutes.

  6. Garnish & Serve: Remove from heat, sprinkle with fresh parsley, and serve hot.
