Soup Dumplings

Served with Homemade Beef Stew

Yield: Serves 4–6 (about 10–12 medium dumplings, depending on size)
Prep Time: 10 minutes
Cook Time: 40 minutes
Special Equipment: Large pot or Dutch oven with a tight-fitting lid

 

Ingredients

  • 1½ cups all-purpose flour

  • 2 teaspoons baking powder

  • ¾ teaspoon salt

  • 3 tablespoons shortening

  • ¾ cup milk

 

Directions

1. In a medium bowl, whisk together the flour, baking powder, and salt.

2. Cut in the shortening by folding it in until the mixture resembles coarse crumbs.

3. Stir in the milk just until combined- do not over mix.

4. Drop spoonfuls of dough into gently simmering soup or stew.

5. Cover and cook for 20 minutes without lifting the lid.

6. Uncover and cook an additional 20 minutes, until dumplings are set and fluffy.
