Hot Dog Cornbread Poppers

Savory cornbread muffin poppers packed with browned kielbasa, sweet corn, and melty cheddar. Easy, nostalgic, and perfect for busy nights or snacking.

Ingredients

  • 2 boxes Jiffy cornbread mix

  • 2 large eggs

  • ⅔ cup milk

  • 1 can sweet corn, drained

  • 2–3 cups shredded cheddar cheese

  • 1 lb kielbasa sausage, cut into large bite-size rounds

  • Neutral oil, for browning sausage

 

Directions

  1. Preheat oven to 400°F and grease a muffin tin.

  2. Brown the kielbasa rounds in a skillet with a little oil until golden. Remove from heat.

  3. In a large bowl, mix both boxes of Jiffy with eggs and milk according to package directions.

  4. Stir in drained corn and shredded cheddar.

  5. Place one browned sausage round into each muffin cup.

  6. Spoon cornbread batter over the sausage, filling cups about ¾ full.

  7. Bake 15–18 minutes until golden and set. Cool slightly before removing.
