1 pound chicken (uncooked)
1 (10.5 oz) can cream of celery soup
1 (10.5 oz) can cream of mushroom soup
2 cups shredded cheddar cheese
1 cup shredded pepper jack (or jalapeño jack) cheese
1 bell pepper, diced
1 (4 oz) jar pimentos, drained
1 (4 oz) can green chilies
16 ounces spaghetti
3 cloves garlic, minced
1/2 onion, diced
1 stalk celery, diced
Spices & Seasonings
1 teaspoon seasoned salt
1/8 teaspoon cayenne pepper
Salt
Black pepper
Butter, oil, or cooking spray (for greasing dish)
Directions
Preheat & Prep
Preheat oven to 350°F. Grease a 9x13-inch baking dish.Cook the Chicken
Boil the chicken in salted water until fully cooked. Remove and set aside.
Reserve the broth.Cook the Spaghetti
Bring broth back to a boil (add water if needed). Cook spaghetti until al dente.Mix the Filling
Shred chicken. In a large bowl, combine all ingredients except the pepper jack cheese. Mix well.Assemble
Pour into prepared dish and top with pepper jack cheese.Bake
Bake 45 minutes at 350°F — covered for 30 minutes, uncovered for the last 15 minutes to brown the cheese.Garnish
Garnish to your liking and serve with a fresh salad.
