This Sriracha Mayo is a creamy, zesty sauce that delivers a perfectly balanced kick from sriracha, brightened by lime juice and a hint of umami-rich fish sauce.

Yields: About ¾ to 1 cup

Storage: In the refrigerator, sealed, up to 1 week

 

Ingredients

  • ½ cup mayonnaise, kewpie preferred

  • 2-3 Tbsp sriracha, adjust to taste

  • 1 tsp fresh lime juice, substitute lemon juice, white vinegar, or rice vinegar

  • ¼ tsp garlic powder, adjust to taste

  • ⅛ tsp toasted sesame oil, be very cautious, only a few drops!

  • Splash fish sauce, to taste

 

Directions

  1. In a small bowl, combine the mayonnaise, sriracha, lime juice, garlic powder, fish sauce, and sesame oil.

    Whisk vigorously until all ingredients are well combined and the mixture is smooth and creamy.

  2. Taste and adjust the sriracha for desired spiciness. You can also add a pinch of salt if you feel it needs it.

  3. Transfer to a squeeze bottle for easy drizzling or simply use a spoon. Store leftovers in the refrigerator in a sealed container for up to one week.
