Sweet & Sour Pork with Peaches, Nectarines, Apples & Pineapple
Tender pork is simmered in a sweet and tangy sauce with juicy peaches, nectarines, apples, and pineapple for a colorful, flavor packed meal that's perfect served over jasmine rice.

Ingredients
lbs pork loin or pork tenderloin, cut into 1 inch cubes
2 tbsp cornstarch
1 tsp salt
1/2 tsp black pepper
2 tbsp vegetable oil
2 peaches, cut into bite sized pieces
2 nectarines, cut into bite sized pieces
1 large Honeycrisp or Fuji apple, peeled and chopped
2 cups fresh pineapple chunks
1 red bell pepper, chopped
1 green bell pepper, chopped
1 medium onion, cut into chunks
Sweet & Sour Sauce:
¾ cup pineapple juice or apple juice
⅓ cup rice vinegar
⅓ cup brown sugar
2 tbsp ketchup
2 tbsp soy sauce
1 tbsp honey
2 tbsp cornstarch
2 tbsp cold water
Directions
Toss the pork with the cornstarch, salt, and pepper.
Heat the oil in a large skillet or Dutch oven over medium high heat. Brown the pork for 5 to 7 minutes, then remove to a plate.
Cook the bell peppers and onion for 4 to 5 minutes. Add the pineapple, apple, peaches, and nectarines and cook for 2 to 3 minutes.
Whisk together the pineapple juice, rice vinegar, brown sugar, ketchup, soy sauce, and honey. Pour into the skillet and bring to a simmer.
Return the pork to the pan and cook for 8 to 10 minutes, until fully cooked.
Stir together the cornstarch and cold water, then add to the sauce. Cook for 1 to 2 minutes until thickened and glossy.
Serve over hot jasmine rice and garnish with green onions and sesame seeds.
