Seoul Fire Steak Noodles

Sweet and spicy Korean inspired steak tossed with glossy lo mein noodles, crisp vegetables, jalapeños, and a bold ginger lime sauce cooked hot and fast on the Blackstone.

Ingredients

  • 2 New York strip steaks, thin sliced against the grain

  • ½ cup soy sauce

  • 2 tbsp brown sugar

  • 1 tbsp honey

  • ½ to 1 green Anjou pear, grated with juices

  • 4 cloves garlic, minced

  • 1 tbsp fresh ginger, grated

  • 1 tbsp sesame oil

  • 1 tbsp rice vinegar

  • 1 tbsp gochujang

  • 1 tsp onion powder

  • 2 green onions, sliced

  • ½ tsp black pepper

    Sweet Spicy Ginger Lime Sauce:

  • ½ cup fresh lime juice

  • 3 tbsp fish sauce

  • 3 tbsp rice vinegar

  • 3 tbsp soy sauce

  • ¼ cup plus ½ tbsp brown sugar

  • 1½ tbsp honey

  • 1½ tbsp chili garlic sauce

  • 3 cloves garlic, crushed

  • 1 ½ tsp fresh ginger, grated

  • ⅜ tsp toasted sesame oil

  • 1 ½ tsp cornstarch mixed with 1½ tbsp water optional

    Noodles:

  • 1 lb dry Chinese lo mein noodles

  • Sesame oil for tossing

    Veggies:

  • 2 to 3 cups sliced napa cabbage

  • 1/2 red bell pepper, thin sliced

  • 1/2 yellow bell pepper, thin sliced

  • 1 small onion, sliced

  • 8 oz mushrooms, sliced

  • 1 to 2 jalapeños, thin sliced

  • 4 scallions, bias cut

  • 1 to 2 tbsp butter

    Toppings:

  • Fresh jalapeño slices

  • Crushed peanuts

  • Sesame seeds

  • Cilantro

  • Lime wedges

  • Spicy mayo drizzle optional

 

Directions

  1. Mix all steak marinade ingredients together and marinate steak 1 to 4 hours.

  2. Whisk together all sauce ingredients and set aside.

  3. Cook lo mein noodles until barely tender, drain, rinse briefly, and toss lightly with sesame oil.

  4. Heat Blackstone or plancha to medium high to high heat with separate hot and medium zones.

  5. Sear steak in batches until browned with charred edges, then remove and keep warm.

  6. Cook mushrooms separately until browned and moisture cooks out.

  7. Stir fry onion, peppers, napa cabbage, and jalapeños until slightly softened, then add scallions near the end.

  8. Add noodles and about 3/4 of the sauce and toss until glossy and coated. Add more sauce if needed and add slurry if using.

  9. Add steak back in and finish with butter, a drizzle of sesame oil, jalapeños, peanuts, sesame seeds, cilantro, and lime wedges.
