Ingredients
1 whole tri tip roast
Beef rub or seasoning of choice
Slider rolls or Hawaiian rolls
Munster cheese slices
Prepared chimichurri sauce
Caramelized onions
Butter or oil for the pan as needed
Directions
Season the tri tip generously on all sides. Grill over indirect heat at about 350°F until the internal temperature reaches 100 to 110°F, then rest 5 to 10 minutes. Sear over direct heat until a good crust forms, pull at medium rare, rest briefly, and slice thin against the grain.
Heat a skillet over low heat and place Munster cheese slices directly in the pan. Slice the rolls in half and place both halves cut side down onto the melting cheese. Cook until the cheese crisps and bonds to the bread, then remove.
Assemble the sliders by layering sliced tri tip on the cheese crusted bottom roll, topping with caramelized onions, spooning chimichurri over the top, and finishing with the cheese crusted top roll.
Tips:
Chimichurri can be drizzled lightly or served on the side. These are best served warm to keep the cheese crisp and the steak juicy.
