Ultimate Prime Rib Leftover Sliders with Jalapeño Popper Topping

Ingredients
Leftover prime rib, thinly sliced
Soft dinner rolls or Texas Roadhouse-style rolls
Smoked provolone cheese slices
3–4 bacon-wrapped jalapeño poppers, roughly chopped
Fresh green beans, blanched and sautéed with bacon and mushrooms
½ cup mayonnaise
2–3 tbsp prepared horseradish
1 tsp Dijon mustard
1 tsp lemon juice
Pinch garlic powder or minced garlic
Salt and black pepper, to taste
Directions
In a bowl, mix mayonnaise, horseradish, Dijon, lemon juice, garlic, salt, and pepper. Set aside.
Place sliced prime rib on the bottom half of each roll and top with smoked provolone.
Broil just until the cheese is melted and bubbly.
Spread horseradish aioli over the meat and cheese.
Add chopped jalapeño poppers, close with the top bun, and serve warm with sautéed green beans on the side.
