Vanilla Raspberry Spritzer

A refreshing and elegant non-alcoholic drink featuring a homemade raspberry vanilla syrup, bright lemon juice, and bubbly club soda. Garnish with fresh raspberries and lemon slices for a stunning presentation. Optional splash of Prosecco or white rum if you're feeling festive.

Ingredients

  • ½ cup water

  • ½ cup cane sugar

  • ¾ cup fresh or frozen raspberries

  • 1 tsp pure vanilla extract

  • 1 oz raspberry vanilla syrup

  • ½ oz fresh lemon juice

  • Club soda

  • Ice

  • Fresh raspberries and lemon slices for garnish

 

Directions

  1. Make the Syrup

    In a small saucepan, combine water, sugar, and raspberries. Bring to a boil, then reduce heat and simmer for 10–15 minutes, stirring occasionally until berries break down.

    Strain through a fine mesh sieve, pressing the berries to extract all juice. Stir in vanilla extract and let cool completely.

  2. Assemble the Spritzer

    Fill a glass with ice. Add 1 oz of raspberry vanilla syrup and ½ oz of lemon juice. Stir gently.

    Top with club soda. Garnish with fresh raspberries and a lemon slice.

    Optional:

    Add a splash of Prosecco or white rum for a festive twist.
