Hot Honey Chicken Tacos with Ranch Slaw

Ingredients
1 lb boneless skinless chicken breasts, cut into strips
1 tsp chipotle powder or smoked paprika
Salt & pepper to taste
1 tbsp olive oil
¼ cup honey
1–2 tsp hot sauce
½ tsp red pepper flakes
2 cups coleslaw mix
¼ cup mayonnaise
2 tbsp buttermilk or sour cream
1 tbsp lime juice
6 small flour or corn tortillas
½ cup shredded cheddar cheese
Crispy fried onions
Fresh cilantro and lime wedges for garnish
Directions
Make the Hot Honey
In a small saucepan, warm honey over low heat. Stir in hot sauce and red pepper flakes. Simmer for 2–3 minutes, then set aside.
Cook the Chicken
Toss chicken with chipotle powder, salt, pepper, and olive oil. Sauté in a skillet over medium-high heat until golden and fully cooked, about 6–8 minutes.
Mix the Slaw
In a bowl, whisk together mayonnaise, buttermilk or sour cream, lime juice, salt, and pepper. Add coleslaw mix and toss to coat.
Warm the Tortillas
Toast tortillas in a dry skillet or microwave until soft and pliable.
Assemble the Tacos
Fill each tortilla with chicken, slaw, and cheese. Top with crispy fried onions. Drizzle with hot honey and garnish with fresh cilantro and lime wedges
