Watermelon, Feta, Mint & Basil Salad with Balsamic Glaze

Sweet, juicy watermelon is paired with crisp cucumber, creamy feta, fresh herbs, and a light vinaigrette, then finished with a drizzle of balsamic glaze for a refreshing summer salad.

Ingredients

  • 3 cups seedless watermelon, cut into 1 inch cubes

  • 1 cup crumbled feta cheese

  • 1 cup finely chopped cucumber

  • 1 shallot, thinly sliced

  • 1/2 cup coarsely chopped fresh mint, plus extra for garnish

  • 1/4 cup coarsely chopped fresh basil

  • 1/4 cup extra virgin olive oil

  • 2 tbsp red wine vinegar

  • 1/2 tsp salt

  • Freshly cracked black pepper, to taste

  • Balsamic glaze, for drizzling

 

Directions

  1. In a small bowl, whisk together the olive oil, red wine vinegar, salt, and black pepper until well combined.

  2. In a large serving bowl, gently combine the watermelon, cucumber, shallot, feta, mint, and basil.

  3. Pour the dressing over the salad and toss gently to coat.

  4. Transfer to a serving platter or bowl. Drizzle the balsamic glaze over the top in a zigzag pattern and garnish with additional fresh mint and basil before serving.

    Tips

    For the best presentation, drizzle the balsamic glaze over the finished salad instead of mixing it in. This keeps the flavors fresh and creates a beautiful contrast.

    This salad pairs wonderfully with grilled chicken, salmon, pork chops, or as part of a summer brunch spread.
