Watermelon Sandwiches
A refreshing, no-cook summer sandwich stacked with juicy watermelon, creamy mozzarella, and fresh basil.

Special Equipment: knife and cutting board
Ingredients
Fresh watermelon slices
2 slices Buffalo mozzarella
2 Slices tomato
3 or 4 pieces Fresh basil leaves
Balsamic glaze
Extra virgin olive oil
Salt and pepper, to taste
Directions
Cut the watermelon into two square-shaped slices to serve as the "bread" for your sandwich.
Layer one slice with fresh mozzarella, a pinch of salt and pepper, sliced tomatoes, and fresh basil leaves.
Drizzle lightly with EVOO and balsamic glaze.
Place the second watermelon slice on top to complete the sandwich.
Slice in half and serve immediately.
