Pineapple Squares

These creamy, dreamy Pineapple Squares are made with a buttery graham cracker crust, a tangy cream cheese pineapple filling, and topped with fluffy whipped cream. Perfect for a refreshing summer dessert!

Ingredients

  • 1 2/3 cups graham cracker crumbs

  • 3 tablespoons sugar

  • ⅓ cup melted butter

  • 8 oz cream cheese, room temperature

  • ¾ cup powdered sugar

  • 1 cup crushed pineapple, well-drained canned or fresh

  • 1 cup plus 2 tablespoons pineapple juice

  • 2 cups heavy cream

  • ½ cup powdered sugar

 

Directions

  1. In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined.

  2. Press the mixture evenly into the bottom of a 9x9-inch baking dish. Refrigerate the crust while preparing the filling.

  3. In a large mixing bowl, beat the cream cheese with an electric mixer until smooth.

  4. Add ¾ cup powdered sugar and beat again until fully combined and creamy.

  5. Mix in the drained crushed pineapple plus 2 tablespoons of pineapple juice until well incorporated.

  6. In a separate bowl, whip the heavy cream and ½ cup powdered sugar until stiff peaks form.

  7. Gently fold half of the whipped cream into the cream cheese mixture. And spread the cream cheese filling evenly over the chilled graham cracker crust. Top with the remaining whipped cream, spreading it evenly. Sprinkle the top with a few reserved graham cracker crumbs.

  8. Refrigerate until set, at least 4 hours or overnight for best results.
