Ingredients
2 chicken breasts
Salt & pepper to taste
1-2 tablespoons neutral oil
4 ounces cream cheese, room temperature
3 tablespoons butter, softened
1 packet dried Italian dressing mix
1(10.5-ounce) can cream of chicken or cream of mushroom soup
¾ cup chicken broth or white wine
3 garlic cloves, minced
16 ounces Angel hair pasta
Grated Parmesan cheese, for serving (optional)
Dried or fresh parsley, or garnish (optional)
Directions
Prepare the Chicken
Preheat oven to 375°F if baking.
Spray or lightly oil an 8x8-inch or 9x13-inch casserole dish and set aside.
Pat chicken breasts dry and season both sides with salt and pepper.
If needed, pound chicken breasts to an even thickness for more consistent cooking.
Heat oil in a skillet over medium heat.
Lightly brown the chicken breasts on both sides. They do not need to be fully cooked at this stage.
Make the Sauce
In a medium bowl, combine:
Cream cheese
Softened butter
Then mix until smooth and creamy.
Add:
Cream soup
Chicken broth
Minced garlic
Italian dressing mix
Then stir until fully blended.
Cook the Chicken
Oven Method
Place browned chicken breasts in the prepared casserole dish.
Pour the sauce evenly over the chicken.
Bake at 375°F for 20-30 minutes, or until the chicken reaches an internal temperature of 165°F.
Stovetop Method
Place browned chicken and prepared sauce into a large skillet.
Cover and cook over medium-low heat for about 30 minutes.
Stir occasionally and cook until the chicken reaches 165°F internally.
Slow Cooker Method
Spray or line the slow cooker to prevent sticking.
Place browned chicken in the slow cooker.
Pour sauce over the chicken.
Cover and cook on low for 4-5 hours, or until chicken reaches 165°F internally.
Prepare the Pasta
Near the end of cooking, bring a large pot of salted water to a boil.
Cook angel hair pasta until al dente.
Drain well, reserving 1 cup of pasta water in case the sauce needs thinning.
Serve
Place angel hair pasta on each plate.
Top with chicken.
Spoon extra sauce over the chicken and pasta.
Garnish with Parmesan cheese and parsley, if desired.
