Argentinean Salsa Criolla

This simple, zesty salsa is a traditional Argentinian condiment that adds a refreshing crunch to asado (barbecue) with a combination of onion, tomato, bell pepper tossed in red wine vinegar and olive oil.

Ingredients

  • 1 small red onion, finely diced

  • 1 large tomato, deseeded and finely diced

  • ½ red bell pepper, finely diced

  • 2 tbsp red wine vinegar

  • 1 tbsp lemon juice, fresh squeezed

  • 2 tbsp extra virgin olive oil

  • Pinch of Kosher salt, to taste

 

Directions

  1. Mix: In a small bowl, combine the finely diced red onion, tomato, and red bell pepper.

  2. Dress: Whisk together the red wine vinegar, lemon juice, olive oil, and sea salt. Pour the dressing over the vegetables and stir to combine.

  3. Rest: Let the salsa sit for at least 5 minutes to allow the flavors to meld. For an even better flavor, you can make it ahead of time and refrigerate it for up to an hour before serving. This allows the acidity from the vinegar to soften the raw onion.
