Asian Inspired Chicken Lettuce Cups

Ingredients

  • 1 lb ground chicken

  • 2 green onions, sliced, white and green parts separated

  • 1 head butter lettuce, leaves separated

  • 1 Fresno chili, thinly sliced

  • 3 oz sugar snap peas, chopped

  • 2 oz water chestnuts, chopped

  • 1 oz sweet Thai chili sauce

  • 1 oz soy sauce

  • 1 oz rice vinegar

  • 1 tbsp fresh ginger, grated

  • 2 cloves garlic, minced

  • Chopped cashews, for garnish, optional

 

Directions

  1. Separate the butter lettuce into individual leaves and rinse if needed. Slice the green onions, keeping the white and green parts separate. Thinly slice the Fresno chili, chop the sugar snap peas and water chestnuts, grate the ginger, and mince the garlic.

  2. Heat a large skillet over medium high heat. Add the ground chicken and cook, breaking it into crumbles until browned.

  3. Stir in the garlic, ginger, white parts of the green onions, and Fresno chili. Cook for 1 to 2 minutes until fragrant.

  4. Add the sugar snap peas, water chestnuts, sweet Thai chili sauce, soy sauce, and rice vinegar. Stir well and cook for 2 to 3 minutes, until the vegetables are crisp tender and the sauce coats the chicken.

  5. Spoon the chicken mixture into the butter lettuce leaves. Garnish with the green onion tops and chopped cashews, if desired.
