Ingredients
2 pounds beets, trimmed and scrubbed
2 tablespoons olive oil for roasting
½ teaspoon salt
¼ teaspoon black pepper
8 ounces burrata cheese
¼ cup pistachios, shelled and roughly chopped
2 tablespoons olive oil
1 tablespoon lemon juice
¼ teaspoon lemon zest
Directions
Roast the Beets: Preheat oven to 400°F (200°C). Toss the beets with 2 tablespoons olive oil, salt, and pepper. Roast for 45–60 minutes, or until fork-tender. Let cool slightly, then peel and slice.
Make the Dressing: In a small bowl, whisk together 2 tablespoons olive oil, lemon juice, and lemon zest until well combined.
Assemble the Salad: Arrange the sliced beets on a serving platter. Tear or place the burrata cheese on top and sprinkle with chopped pistachios.
Finish and Serve: Drizzle the salad with the lemon-olive oil dressing and serve immediately.
