Ingredients

  • 2 pounds beets, trimmed and scrubbed

  • 2 tablespoons olive oil for roasting

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 8 ounces burrata cheese

  • ¼ cup pistachios, shelled and roughly chopped

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • ¼ teaspoon lemon zest

 

Directions

  1. Roast the Beets: Preheat oven to 400°F (200°C). Toss the beets with 2 tablespoons olive oil, salt, and pepper. Roast for 45–60 minutes, or until fork-tender. Let cool slightly, then peel and slice.

  2. Make the Dressing: In a small bowl, whisk together 2 tablespoons olive oil, lemon juice, and lemon zest until well combined.

  3. Assemble the Salad: Arrange the sliced beets on a serving platter. Tear or place the burrata cheese on top and sprinkle with chopped pistachios.

  4. Finish and Serve: Drizzle the salad with the lemon-olive oil dressing and serve immediately.
