Butter Chicken
Tender bite-size chicken marinated in warm spices and yogurt, then simmered in a rich garlicky tomato cream sauce finished with butter. Perfect with rice or naan.

Ingredients
2 boneless skinless chicken breasts, cut into bite-size pieces
2 tsp garam masala, divided
2 tbsp butter chicken seasoning, divided
½ cup Greek yogurt
2 tbsp butter, divided • Olive oil, as needed
½ red onion, very finely diced
5–6 garlic cloves, minced
1–2 tsp fresh ginger, minced
1 (6 oz) can tomato paste
½ of a 10–12 oz can tomato sauce
2 cups heavy cream
Salt, to taste
Cooked rice or naan, for serving
Directions
Mix chicken, 1 tsp garam masala, 1 tbsp butter chicken seasoning, and Greek yogurt. Marinate 30 minutes.
Heat a skillet with a little butter and olive oil. Cook chicken 5–6 minutes until done. Remove from pan.
In the same pan, add more butter and oil if needed. Sauté onion 4–5 minutes until soft. Add garlic and ginger; cook 1 minute.
Stir in tomato paste, 1 tsp garam masala, and 1 tbsp butter chicken seasoning. Cook 2 minutes.
Add tomato sauce and heavy cream. Stir until smooth.
Return chicken to pan and simmer 5 minutes until thick.
Stir in remaining butter and remove from heat. Serve hot.
