Chicken Parmesan Cutlets

Ingredients
2 chicken breasts
Flour
Salt and pepper
1 to 2 eggs, beaten
Seasoned panko breadcrumbs
Jarred pasta sauce
Mozzarella cheese
Oil for frying (avocado, canola, or grapeseed oil)
Directions
Slice each chicken breast in half horizontally or pound thin to about 1/4 inch thick. Season both sides with salt and pepper.
Set up three bowls with flour, beaten eggs, and seasoned panko. Dredge each cutlet in the flour, then the egg, then the panko, pressing firmly so the coating sticks.
Heat about 1/4 inch of oil in a skillet over medium high heat. Fry the cutlets for 2 to 3 minutes per side until golden brown. Drain on a wire rack or paper towels.
Top each cutlet with a spoonful of pasta sauce and mozzarella cheese. Bake at 375°F for 8 to 12 minutes until the cheese is melted, or broil for 2 to 4 minutes until bubbly and lightly browned.
