Chickpea Gravy

A rich, smoky, creamy vegan gravy built on toasted chickpeas and a simple roux, blended smooth for the perfect pour-over-anything finish

Ingredients

  • 2 tbsp vegan butter

  • 1 can chickpeas, drained and rinsed

  • 2 tbsp chickpea flour or all-purpose flour

  • 1 “Not Chicken” broth cube (or vegan chicken-style bouillon)

  • 1 ½ cups water (add more as needed)

  • A few drops liquid smoke

  • 2–3 tbsp plant-based heavy cream or creamy oat milk

  • Salt & pepper to taste

 

Directions

  1. Melt vegan butter in a saucepan over medium heat, add chickpeas, and sauté 3–4 minutes to lightly toast.

  2. Stir in flour to coat the chickpeas, then crumble in the broth cube and slowly add water while stirring

  3. Add liquid smoke, blend the mixture with a hand blender until smooth, return to the stove, and simmer 3–5 minutes until thickened.

  4. Stir in plant-based cream and season with salt and pepper.
