Chocolate Custard
Smooth, rich, and creamy. this homemade chocolate custard is perfect for dessert cups, pie fillings, or layered treats

Ingredients
3 tbsp salted butter
1 cup packed brown sugar
¼ cup cornstarch
1 cup heavy cream
2 cups whole milk
3 egg yolks
2 tsp vanilla extract (or seeds from 1 vanilla bean)
4 oz melted dark chocolate (or chocolate of your choice)
Directions
Melt chocolate: Melt chocolate in a double boiler or microwave (20-second bursts). Set aside to cool slightly.
Mix dry: In a saucepan off heat, whisk brown sugar and cornstarch until smooth.
Add dairy: Slowly whisk in milk and cream until combined.
Heat: Cook over medium heat, whisking until steaming and lightly bubbling (3–5 minutes).
Temper eggs: Whisk egg yolks in a bowl; slowly add ½ cup of hot mixture while whisking. Return yolk mixture to saucepan.
Thicken: Cook over medium-low heat, whisking until thick enough to coat the back of a spoon (2–4 minutes).
Finish: Remove from heat. Stir in melted chocolate, butter, and vanilla until smooth and glossy.
Strain: Pass through a fine mesh sieve for extra smoothness.
Chill: Press plastic wrap on top and refrigerate at least 2 hours.
