Payday Rice Krispie Treats

A salty-sweet treat inspired by PayDay candy bars. Now with candy corn for a festive, nostalgic kick. Perfect for fall or anytime you’re craving a chewy, crunchy, peanutty snack

Ingredients

  • 3 tbsp butter

  • ½ cup peanut butter (creamy or crunchy)

  • 1 (10 oz) bag mini marshmallows (about 5½ cups)

  • ¼ tsp salt

  • ½ tsp vanilla extract

  • 5 cups Rice Krispies cereal

  • 1½ cups salted dry roasted peanuts

  • 1 to 1½ cups candy corn

  • Optional: ½ cup caramel chips or soft caramels (for drizzle or layering)

 

Directions

  1. Prep pan: Line a 9x13-inch pan with parchment paper or lightly grease.

  2. Melt base: In a large saucepan, melt butter and peanut butter over medium-low heat. Add marshmallows and stir until smooth. Stir in vanilla and salt.

  3. Combine: Remove from heat. Stir in Rice Krispies, 1 cup peanuts, and 1 cup candy corn. Mix quickly until coated.

  4. Press: Transfer to pan and press gently with greased spatula or parchment paper.

  5. Top: While warm, sprinkle remaining peanuts and candy corn on top, pressing lightly.

  6. Optional drizzle: Melt caramel chips or caramels with 1–2 tsp cream or milk; drizzle over top.

  7. Cool: Let set 30 minutes at room temperature. Slice into bars and enjoy.
