Yield: About 4 servings
Prep Time: 10 minutes
Cook Time: 8-10 minutes
Special Equipment: Deep skillet or pot, slotted spoon, tongs

Ingredients

  • 1 lb Fresh Green Beans (Haricot Verts preferred), washed and trimmed

  • ½ cup All-Purpose Flour

  • 1 large egg

  • 1 cup panko

  • 1 Tbsp prepared mustard

  • ½ tsp garlic powder

  • ½ tsp paprika (smoked preferred)

  • Kosher salt and black pepper

  • Vegetable or Canola Oil, for frying

Directions

  1. Set Up Dredging Stations: Set up three shallow bowls in a line. In the first bowl, place the flour seasoned with a generous pinch of salt and pepper. In the second bowl, whisk the egg with the mustard. The mustard is not only used for flavor, but it helps the egg in creating the perfect coating. In the third bowl, place the panko and season with garlic powder, paprika, salt and pepper.

  2. Flour and Egg Coat: Working in small batches, toss the trimmed green beans in the first bowl (flour) until they are lightly coated. Shake off any excess. Next, dip the floured beans into the second bowl.

  3. Panko Press: Transfer the wet beans to the third bowl with panko. Press the beans firmly into the mixture to ensure a thick, full coating of the seasoned panko. Set aside the coated beans on a separate plate.

  4. Heat Oil: Heat 1-2 inches of high-smoke-point oil (like canola or vegetable oil) in a deep skillet or pot to 350°F. Use a thermometer for best results.

  5. Fry in Batches: Carefully place the coated beans into the hot oil in small batches. Do not overcrowd the pan, as this lowers the oil temperature and prevents crisping.

  6. Cook Until Golden: Fry each batch for 2-4 minutes, turning as needed, until the crust is golden brown and perfectly crispy.

  7. Drain and Final Season: Transfer the fried beans immediately to a paper towel-lined plate to drain excess oil. Season immediately with a final, generous pinch of salt.

  8. Serve: Combine the ranch and the chili garlic sauce for Serve these Crispy Green Beans hot with your favorite dipping sauce! Try this chorizo gravy dip or this restaurant spicy ranch.
