Crispy Curry Chicken

Crispy Curry Chicken is a bold, flavor-packed dish featuring juicy chicken coated in a savory curry-seasoned crust and fried or baked until perfectly golden and crunchy. Infused with aromatic spices, garlic, and rich curry flavor, every bite delivers a crispy exterior with tender, juicy meat inside — perfect served with rice, dipping sauces, or fresh vegetables.

Ingredients

  • 10 oz chicken thighs, chopped

  • 2 tbsp mayonnaise

  • 3 tbsp sweet chili sauce

  • 1 tbsp sugar

  • 2 tsp curry powder

  • ¼ cup cornstarch

  • ¼ tsp crushed red pepper flakes

  • Juice of 1 lime

  • Salt & Pepper to taste

  • Oil, for frying

 

Directions

  1. Make the Sauce

    In a large bowl, combine the mayonnaise and sweet chili sauce. Set aside.

  2. Prep the Chicken

    Pat the chopped chicken dry with a paper towel and place in a bowl. Season with salt and pepper.

  3. Coat the Chicken

    Add the cornstarch and curry powder to the chicken. Toss until evenly coated.

  4. Heat the Oil

    In a large pan, heat a thin layer of oil over medium-high heat. The oil is ready when a pinch of cornstarch sizzles immediately.

  5. Cook the Chicken

    Add the coated chicken in an even layer, shaking off excess coating.

    Cook undisturbed for 3-
    4 minutes, until lightly browned.

    Stir and continue cooking for another 3-4 minutes, until fully cooked and browned.

  6. Combine with Sauce
    Turn off the heat and discard any excess oil from the pan. Transfer the chicken to the bowl with the sauce and toss to coat.

  7. Finish & Serve
    Taste and adjust seasoning with salt and pepper if needed. Serve with a squeeze of lime juice.
