Delicious Parmesan Crusted Chicken
Crispy, golden chicken with a flavorful Parmesan crust and tender juicy inside. Simple, classic, and perfect with a squeeze of lemon.

Ingredients
2 large chicken breasts, split and butterflied
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
2 tsp Italian seasoning
2 large eggs
1/2 cup all purpose flour
1 1/2 tsp garlic powder
Salt and black pepper
6 tbsp olive oil
Lemon wedges optional
Fresh parsley optional
Directions
Cut and flatten chicken to about 1/4 inch thick.
In one bowl mix flour, garlic powder, and Italian seasoning. In another beat eggs. In a third mix breadcrumbs and Parmesan.
Season chicken with salt and pepper, dredge in flour mixture, dip in egg, then coat in breadcrumb mixture.
Heat oil in a skillet over medium and fry chicken about 4 minutes per side until golden and cooked through. Work in batches.
Drain on paper towels and serve with lemon and parsley if desired.
