Delicious Parmesan Crusted Chicken

Crispy, golden chicken with a flavorful Parmesan crust and tender juicy inside. Simple, classic, and perfect with a squeeze of lemon.

Ingredients

  • 2 large chicken breasts, split and butterflied

  • 1 cup panko breadcrumbs

  • 1/2 cup grated Parmesan cheese

  • 2 tsp Italian seasoning

  • 2 large eggs

  • 1/2 cup all purpose flour

  • 1 1/2 tsp garlic powder

  • Salt and black pepper

  • 6 tbsp olive oil

  • Lemon wedges optional

  • Fresh parsley optional

 

Directions

  1. Cut and flatten chicken to about 1/4 inch thick.

  2. In one bowl mix flour, garlic powder, and Italian seasoning. In another beat eggs. In a third mix breadcrumbs and Parmesan.

  3. Season chicken with salt and pepper, dredge in flour mixture, dip in egg, then coat in breadcrumb mixture.

  4. Heat oil in a skillet over medium and fry chicken about 4 minutes per side until golden and cooked through. Work in batches.

  5. Drain on paper towels and serve with lemon and parsley if desired.
