Easy Pasta Salad

This delightful pasta salad combines the flavors of creamy mayonnaise, tangy mustard, and savory halloumi with fresh vegetables. Perfect for any gathering or a simple family meal, it’s sure to become a favorite!

 

Ingredients

  • 8 ounces macaroni pasta

  • 1 green bell pepper, diced

  • 2 medium carrots, shredded

  • 1 cup halloumi, diced

  • 1/2 cup mayonnaise

  • 1/4 cup sour cream

  • 1 tablespoon mustard

  • Salt and black pepper to taste

 

Directions

  • Cook the Pasta: Cook macaroni pasta according to package instructions until al dente. Drain and rinse under cold water.

  • Prepare the Vegetables and Cheese: Dice the green bell pepper, shred the carrots, and dice the halloumi.

  • Create the Dressing: In a small bowl, whisk together the mayonnaise, sour cream, mustard, salt, and black pepper.

  • Combine Everything: In a large bowl, combine the cooked pasta, green bell pepper, carrots, and halloumi. Pour the dressing over the top and mix until everything is well coated.

  • Chill and Serve: Cover and refrigerate the salad for at least 1 hour before serving to allow the flavors to meld. Serve chilled.

    Notes:

  • You can pan-fry the halloumi for a few minutes to add a golden color and extra flavor.

  • Feel free to adjust the quantities of mayonnaise, sour cream, and mustard to taste.

  • Fresh herbs like parsley or chives can be added for a touch of brightness.
